

Meet Melissa Sanchez

My superpower is being a source of love and light to others by lifting them up and encouraging them to live their best life. Life isn't perfect, nor am I, and I gave up trying to be when I left my first marriage in 2013. I had to fall hard and get knocked down again with my first cancer diagnosis in 2017, and again in 2020. I got back up with every difficulty, which lead me to find my calling and become who God created me to be, as well as my truth about who I am and who I am not. I have had to learn and practice habit stacking and work on balance, especially when raising four teenagers. Colorado native and lover of life, I have lived in Colorado my whole life and love it. I also love to travel and do so as often as life allows. I prefer plane rides to car rides, beaches over snow (ironic, I know), hence why I travel most often to a beach. I love cooking and exercise (at least most forms) long walks, picnics and flowers (especially sunflowers and daisies), reading, dancing, golf, laughing, hosting others, giving back, and time with family and friends. I am lucky to have my second chance at love with a supportive and kind husband who is my partner in life. My journey to become a health coach is the best decision I have made for myself and my family, and helping people to live a life of love, happiness, and health is my passion and calling. A Favorite Recipe:
Turkey And Rice Mango Lettuce Wraps (Or Bowls)
Ingredients:

1 pound ground turkey
-
1 cup organic jasmine rice
-
2 tablespoons extra virgin olive oil
-
1/2 diced yellow onion
-
2 dollops chunky Gourmet Garden garlic paste
-
1 organic living lettuce butter lettuce pack
-
1 mango sliced in thin slices
-
1 cucumber sliced in thin slices
-
1 bundle green onions coined
-
Veri Veri gluten free Teriyaki or low sodium soy sauce

Optional toppings: sliced avocado and jalapenos

Salt and pepper to taste preference
Start Jasmine rice per directions (I use olive oil instead of butter). Warm 1 tablespoon of olive oil in a skillet. Add the diced onion and warm until the onion is translucent (a couple of minutes). Add garlic for one minute and add ground turkey.
In the meantime cut mango, cucumber, green onions, avocado, and jalapenos. Cook ground turkey until no pink. Place living lettuce on a plate and add rice, ground turkey and onion mix, mango, cucumber, green onion, salt and pepper, Veri Veri Teriyaki, and optional avocado, and jalapeno. It's a little messy so if you don't like that, make it a bowl.
This is a family favorite, so easy, yummy, nutritious and delicious.
