
Ingredients
— 18 organic eggs
— 4 cups shredded goat cheese
— Red bell pepper diced, about 1 cup
— Yellow bell pepper diced, about 1 cup
— Green bell pepper diced, about 1 cup
— Sweet yellow onion diced, 1 cup
— Minced garlic, 2-3 dolups
— Sea salt and pepper to taste
— 2 ounce can diced green chilies (mild or hot depending on your preference)
— 2 tablespoons organic olive oil
— 1 pound ground turkey sausage (my family loves chorizo and bacon which you can also use, it is just not as healthy)
— 2-3 organic avocados sliced into strips
Preheat oven to 350°.
Crack eggs, reserving only the white of the egg in a large glass bowl.
Grease a 9x13 baking dish with olive oil and set aside.
Cook ground turkey sausage until done, remove from heat and cool (you can cook the turkey and veggies simultaneously).
Heat 1 tablespoon olive oil in a skillet. Add onion, garlic, and bell peppers. Cook until the veggies soften, remove from heat and cool.
Whisk egg whites, add salt and pepper to you preference. Add in ground turkey, veggie mix, diced green chilies and goat cheese, stir to combine.
Pour into the greased baking dish and spread evenly.
Bake 25-30 minutes until the top is slightly browned.
Cut into square pieces and serve with sliced avocado on the side.
Our family likes Cholula hot sauce to drizzle on top and I serve this with a fresh berry salad. Great for brunch or a breakfast-for-dinner night. This is a protein, veggie packed dish that is sure to please the whole family.
