
Ingredients
— 1 pound ground turkey
— 1 cup organic jasmine rice
— 2 tablespoons extra virgin olive oil
— 1/2 diced yellow onion
— 2 dollops chunky Gourmet Garden garlic paste
— 1 organic living lettuce butter lettuce pack
— 1 mango sliced in thin slices
— 1 cucumber sliced in thin slices
— 1 bundle green onions coined
— Veri Veri gluten free Teriyaki or low sodium soy sauce
— Optional toppings: sliced avocado and jalapenos
— Salt and pepper to taste preference
Start Jasmine rice per directions (I use olive oil instead of butter). Warm 1 tablespoon of olive oil in a skillet. Add the diced onion and warm until the onion is translucent (a couple of minutes). Add garlic for one minute and add ground turkey.
In the meantime cut mango, cucumber, green onions, avocado, and jalapenos. Cook ground turkey until no pink. Place living lettuce on a plate and add rice, ground turkey and onion mix, mango, cucumber, green onion, salt and pepper, Veri Veri Teriyaki, and optional avocado, and jalapeno. It's a little messy so if you don't like that, make it a bowl.
This is a family favorite, so easy, yummy, nutritious and delicious.
