
Ingredients
— 1 1/2 to 2 pounds organic chicken strips
— Garlic powder
— Salt and pepper
— Olive oil
— 3 cups organic chicken broth
— 1 1/2 cups orzo pasta
— 1 package Ruby Rows cherry tomatoes
— 2 cups baby spinach
— 2 lemons divided
— Fresh basil
— Grated parmesan
Lightly dust chicken strips with salt, pepper and garlic powder to your preference. If you have an airfryer, coat your basket with cooking spray (I like the Pam live oil spray). Place the chicken strips in the basket and drizzle with organic olive oil and cook for 15-20 minutes or until chicken is cooked through.
While chicken is cooking, heat the chicken broth over medium to high heat and add orzo, bring to a boil, reduce heat and simmer covered for 8-10 minutes. Add the tomatoes, spinach, basil, and juice from one lemon and stir. When the chicken is finished add to the orzo skillet and sprinkle with parmesan cheese. Add lemon slices to garnish and serve with parmesan, salt and pepper.
