Keeping it easy/nutritious and delicious — One of my favorite go-tos that the whole family loves and I know that I am feeding them and myself with all the good stuff.
— Quinoa per the directions to accommodate your portion needs. Add yellow and red peppers diced.
— Grilled or baked salmon or chicken depending on your prefrence.
— Arugala
Plate the arugula, top with the quinoa, bell pepper mix and place the salmon or chicken on top. If you like a little crunch add some pepitas or tortilla strips. Make it a little spicy by drizzling with sriracha or your favorite hot sauce.
